During the cake cutting there will be no cues on when to start. You start when you feel like it.
To maximize your dancing time and minimize boredom, the Cake Cutting can be performed within the first 15 minutes of the meal. This provides more time for dancing, and your Reception will feel less rushed. The guests who are waiting to be served or to get in line at the buffet can watch.
Sometimes a couple does not want any fanfare, and they cut the cake discreetly. If this is the case tell the me prior to the reception!
